Domaine Hatzidakis Santorini Barrel fermented
Τype: Dry white wine, Santorini Appelation of Origin of High Quality.
Varieties: Assyrtiko 100%
Vinification: Direct separating of the must from the grapes, clarification and fermatation with selected dry yeasts at 18° C. During the alcoolic fermantation, the juice conveyed in new oak barrels. After the end of fermentation the wine mature with the non active yeast. Maturing: In new oak barrels for 10 months.
The wine comes out in a yellow color, which proves thematuration in the barrels, and with golden shades.“The nose” is pleasant with wood and vanillin aromas. “The mouth” appears rich, with well-balanced acidity.
Best served at 11-13˚C.It can be aged for 4 years
